I recently started a Paleo diet, where you pretty much only eat Meat, Nuts. Veggies and Fruit. I'm doing pretty well, but I wanted to find some more creative recipes and came across this one on Pinterest!
CAULIFLOWER PIZZA CRUST
INGREDIENTS
1 head Cauliflower (7-8" wide)
1 large egg
1/2 cup Shredded/Grated Parmesan Cheese
1 tsp Italian Herb Seasoning
1/8 tsp Salt
1/4 tps Ground Pepper
Toppings of Your Choice
Start by pre-heating oven to 375F.
Rinse head of cauliflower.
Cut off all the leaves.
Cut into smaller pieces.
I just used my Ninja Blender and it worked great! I removed any bigger pieces that chop up.
Line a cookie tray with parchment paper and pour chopped cauliflower on evenly.
Place in oven and bake for 15 minutes at 375F. Once done, raise heat on oven to 450F.
The original recipe said to put into three layers of cheesecloth but I didn't have that so I just used paper towels.
Be careful, the cauliflower is still pretty hot.
Add the egg, cheese, salt, pepper and herbs, then mix together with a fork or spoon.
I spread it out with that rubber scraper, but then patted it down more with my clean hands.
Bake for 15-20 minutes at 450F.
Chop up your favorite ingredients. I didn't end up using the spinach, but I did use chopped red & green peppers, chopped tomatoes, sliced black olives, chopped garlic and hamburger meat.
Next time I want to try Hawaiian with ham and pineapple.
Once done, place toppings on. I put the sauce on first, then added cheese and the rest of the chopped and sliced ingredients and then added more cheese.
Place in oven again for another 15 minutes or so or until the cheese is melty. hehe
And voila! Healthy and delicious Cauliflower Crust Pizza!!!

I totally loved making this! I haven't made regular pizza dough ever, but this seemed like it was pretty easy to me. I get intimidated by the whole yeast thing, so to me this was super great!
